Ingredients
- 1 pound ground turkey
- 1 package chorizo
- 1 onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 can black beans (15 ounces), drained and rinsed
- 1 can diced tomatoes (14.5 ounces)
- 1 cup chicken broth
- 1/2 cup chopped cilantro
- 2 cups cooked white rice
Directions
- In a large skillet, heat the olive oil over medium-high heat. Add the ground turkey, chorizo, onion, bell pepper, garlic, chili powder, cumin, oregano, salt, and pepper. Cook until the turkey is cooked through, about 8-10 minutes.
- Add the black beans, diced tomatoes, and chicken broth and stir to combine. Simmer for 10 minutes.
- Stir in the chopped cilantro and serve over cooked white rice.
