Ingredients

  • 1 pound ground turkey
  • 1 package chorizo
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 can black beans (15 ounces), drained and rinsed
  • 1 can diced tomatoes (14.5 ounces)
  • 1 cup chicken broth
  • 1/2 cup chopped cilantro
  • 2 cups cooked white rice

Directions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the ground turkey, chorizo, onion, bell pepper, garlic, chili powder, cumin, oregano, salt, and pepper. Cook until the turkey is cooked through, about 8-10 minutes.
  2. Add the black beans, diced tomatoes, and chicken broth and stir to combine. Simmer for 10 minutes.
  3. Stir in the chopped cilantro and serve over cooked white rice.
