Ingredients

  • 1/2 cup melted coconut oil
  • 1/2 cup coconut sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup rolled oats
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, whisk together melted coconut oil and coconut sugar until smooth.
  3. Beat in the eggs and vanilla extract until combined.
  4. In a separate bowl, sift together the whole wheat flour, baking soda and salt.
  5. Stir the dry ingredients into the wet ingredients until just combined.
  6. Fold in the oats, dried cranberries and chopped walnuts.
  7. Drop dough by tablespoonfuls onto baking sheets lined with parchment paper.
  8. Bake in preheated oven for 12-14 minutes, or until lightly golden brown.
  9. Allow cookies to cool before serving.
