Ingredients
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 pound raw shrimp, peeled and deveined
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes
- 1/4 cup white wine
- 1/4 cup chicken broth
- 2 tablespoons butter
- 2 tablespoons freshly squeezed lemon juice
- Salt and black pepper, to taste
- 2 zucchinis, spiralized
- 2 tablespoons freshly chopped parsley
Directions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the garlic and shrimp and cook for 2 minutes.
- Add the oregano, thyme, and red pepper flakes and cook for 1 minute.
- Add the white wine and chicken broth and bring the mixture to a boil.
- Reduce the heat to low and simmer for 5 minutes.
- Add the butter, lemon juice, salt and pepper, and zucchini noodles and stir to combine.
- Cook for 2 minutes, stirring occasionally, until the shrimp is cooked through and the zucchini is just tender.
- Garnish with fresh parsley and serve.
