Directions
- Preheat the oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- Combine the flour, baking powder, and salt; stir into the creamed mixture alternately with the milk.
- Fold in the shredded coconut.
- Divide the dough into two round pans.
- Bake for 20 to 25 minutes in the preheated oven, or until a toothpick inserted into the center of a roll comes out clean.
- Allow to cool before serving.
