Ingredients

  • 1/2 cup softened butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup shredded coconut

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, baking powder, and salt; stir into the creamed mixture alternately with the milk.
  5. Fold in the shredded coconut.
  6. Divide the dough into two round pans.
  7. Bake for 20 to 25 minutes in the preheated oven, or until a toothpick inserted into the center of a roll comes out clean.
  8. Allow to cool before serving.
