Ingredients
- 4 ears fresh corn
- 1 red onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/3 cup white sugar
- 1/3 cup white vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup vegetable oil
Directions
- Shuck the corn and cut the kernels off the cob into a large bowl.
- Add the diced red onion, red bell pepper, and green bell pepper to the corn.
- In a separate bowl, whisk together the white sugar, white vinegar, salt, black pepper, and vegetable oil until fully combined.
- Pour the dressing over the vegetables and stir to combine.
- Cover and chill in the refrigerator for at least 2 hours before serving.
