Ingredients

  • 4 ears fresh corn
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/3 cup white sugar
  • 1/3 cup white vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup vegetable oil

Directions

  1. Shuck the corn and cut the kernels off the cob into a large bowl.
  2. Add the diced red onion, red bell pepper, and green bell pepper to the corn.
  3. In a separate bowl, whisk together the white sugar, white vinegar, salt, black pepper, and vegetable oil until fully combined.
  4. Pour the dressing over the vegetables and stir to combine.
  5. Cover and chill in the refrigerator for at least 2 hours before serving.
