Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes
- 1 (14.5-ounce) can diced tomatoes
- 1 (14.5-ounce) can beef broth
- 1 pound Italian pork sausage, cut into 1/2-inch pieces
- 2 large potatoes, peeled and cut into 1/2-inch cubes
- 2 large carrots, peeled and cut into 1/2-inch cubes
- Salt and pepper, to taste
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the oregano, basil, thyme, and red pepper flakes and cook for 1 minute.
- Add the tomatoes and beef broth and bring to a boil.
- Add the sausage, potatoes, and carrots and reduce the heat to low.
- Simmer for 1 hour, stirring occasionally.
- Season with salt and pepper, to taste.
- Serve hot.
