1 pound Italian pork sausage, cut into 1/2-inch pieces
2 large potatoes, peeled and cut into 1/2-inch cubes
2 large carrots, peeled and cut into 1/2-inch cubes
Salt and pepper, to taste
Directions
Heat the olive oil in a large pot over medium heat.
Add the onion and garlic and cook until softened, about 5 minutes.
Add the oregano, basil, thyme, and red pepper flakes and cook for 1 minute.
Add the tomatoes and beef broth and bring to a boil.
Add the sausage, potatoes, and carrots and reduce the heat to low.
Simmer for 1 hour, stirring occasionally.
Season with salt and pepper, to taste.
Serve hot.
