Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (14.5-ounce) can beef broth
  • 1 pound Italian pork sausage, cut into 1/2-inch pieces
  • 2 large potatoes, peeled and cut into 1/2-inch cubes
  • 2 large carrots, peeled and cut into 1/2-inch cubes
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the oregano, basil, thyme, and red pepper flakes and cook for 1 minute.
  4. Add the tomatoes and beef broth and bring to a boil.
  5. Add the sausage, potatoes, and carrots and reduce the heat to low.
  6. Simmer for 1 hour, stirring occasionally.
  7. Season with salt and pepper, to taste.
  8. Serve hot.
