Ingredients

  • 1 large eggplant, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon chili flakes
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/4 cup cilantro, chopped

Directions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the eggplant cubes, garlic, ginger, and chili flakes to the skillet and sauté for 5 minutes.
  3. Add the soy sauce and honey and stir to combine.
  4. Continue to cook the eggplant until it is soft and tender, about 10 minutes.
  5. Stir in the sesame oil and cilantro and cook for an additional 1 minute.
