Ingredients

  • 2 chayote squash, peeled and diced
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped

Directions

  1. Preheat oven to 425°F.
  2. In a large bowl, combine chayote squash, olive oil, garlic powder, onion powder, cumin, chili powder, salt, and black pepper. Mix to combine.
  3. Spread chayote squash on a baking sheet and roast for 25-30 minutes, or until squash is tender and golden brown.
  4. Remove from oven and transfer to a serving bowl. Garnish with fresh cilantro and serve.
