Ingredients
- 2 chayote squash, peeled and diced
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
Directions
- Preheat oven to 425°F.
- In a large bowl, combine chayote squash, olive oil, garlic powder, onion powder, cumin, chili powder, salt, and black pepper. Mix to combine.
- Spread chayote squash on a baking sheet and roast for 25-30 minutes, or until squash is tender and golden brown.
- Remove from oven and transfer to a serving bowl. Garnish with fresh cilantro and serve.
