Ingredients
- 1/2 cup butter, softened
- 1/4 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- 1/2 cup raspberry jam
- 1/4 cup chopped walnuts
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, vanilla, baking powder and salt. Gradually stir in the flour, mixing until a soft dough is formed. Divide dough into 24 pieces.
- Roll each piece of dough into a ball and place on the prepared baking sheet. Make an indentation in the center of each cookie with your thumb and fill with 1 teaspoon of raspberry jam. Sprinkle with chopped walnuts.
- Bake for 12 to 15 minutes in the preheated oven, or until golden brown. Let cool on baking sheet for 2 minutes before transferring to a wire rack to cool completely.
