This classic veal meatloaf recipe is a perfect comfort food option for a cozy family dinner. Made with ground veal and a combination of herbs and spices, this meatloaf is moist, flavorful, and satisfying. Serve it with a side of mashed potatoes and green beans for a complete and hearty meal.

Ingredients

  • 1.5 pounds ground veal
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup parsley, chopped
  • 1/4 cup Parmesan cheese, grated
  • 1 large egg, lightly beaten
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard

Directions

  1. Preheat the oven to 350°F (175°C) and lightly grease a loaf pan.
  2. In a small bowl, combine the breadcrumbs and milk. Let it sit for 5 minutes to allow the breadcrumbs to absorb the milk.
  3. In a large mixing bowl, add the ground veal, soaked breadcrumbs, onion, garlic, parsley, Parmesan cheese, egg, Worcestershire sauce, thyme, oregano, salt, and black pepper. Mix well until all the ingredients are evenly combined.
  4. Transfer the meat mixture into the prepared loaf pan and shape it into a loaf.
  5. In a separate small bowl, whisk together the ketchup, brown sugar, and Dijon mustard to make the glaze.
  6. Spread half of the glaze evenly over the top of the meatloaf.
  7. Bake in the preheated oven for 45 minutes.
  8. After 45 minutes, remove the meatloaf from the oven and spread the remaining glaze over the top.
  9. Return the meatloaf to the oven and bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
  10. Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
  11. Serve slices of the meatloaf with your favorite sides and enjoy!
