Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, chilled and diced
- 1/4 cup cold water
- 6-7 large apples, peeled, cored, and thinly sliced
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 egg, beaten
Directions
- In a large mixing bowl, combine the flour and diced butter. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the cold water to the flour mixture, a tablespoon at a time, mixing with a fork until the dough comes together.
- Divide the dough into two equal portions and shape each portion into a flat disk. Wrap both disks in plastic wrap and refrigerate for at least 1 hour.
- Preheat your oven to 425°F (220°C).
- In a separate bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, salt, cornstarch, and lemon juice. Toss until the apples are evenly coated.
- Roll out one of the chilled dough disks on a floured surface to fit a 9-inch pie dish. Carefully transfer the rolled-out dough to the pie dish, gently pressing it to line the bottom and sides of the dish.
- Pour the apple filling into the pie crust, spreading it out evenly.
- Roll out the second chilled dough disk and carefully place it on top of the apple filling. Press the edges of the top and bottom crusts together to seal.
- Trim any excess dough, leaving a 1-inch overhang. Fold the overhang under the bottom crust and crimp the edges to create a decorative border.
- Using a sharp knife, make a few slits on the top crust to allow steam to escape during baking.
- Brush the top crust with the beaten egg, then place the pie on a baking sheet to catch any drips.
- Bake in the preheated oven for 10 minutes, then reduce the temperature to 375°F (190°C) and continue baking for another 40-45 minutes, or until the crust is golden brown and the apple filling is bubbling.
- Remove the pie from the oven and allow it to cool on a wire rack for at least 2 hours before serving. This will allow the filling to set.
- Serve the apple pie warm or at room temperature, and enjoy!
