Ingredients

  • 6 Hatch chiles, roasted, peeled, and seeded
  • 2 large tomatoes, finely chopped
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Directions

  1. Preheat the broiler in your oven.
  2. Place the roasted Hatch chiles on a baking sheet and broil for 5 minutes, turning them halfway through to ensure even roasting.
  3. Remove the chiles from the oven and let them cool slightly.
  4. Once cooled, peel the skin off the chiles and remove the seeds.
  5. Finely chop the roasted chiles and transfer them to a bowl.

  7. Season with salt and pepper to taste.
