Ingredients

  • 4 pounds top sirloin roast
  • 10 cloves garlic, minced

  • 1 teaspoon black pepper
  • 4 carrots, peeled and cut into chunks

  • 4 cups beef broth
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Season the top sirloin roast with salt and black pepper.
  3. In a large Dutch oven or oven-safe pot, heat the olive oil over medium-high heat.
  4. Add the top sirloin roast and sear on all sides until browned. Remove from the pot and set aside.
  5. In the same pot, add the minced garlic, dried thyme, dried rosemary, and onion powder. Cook for 1-2 minutes until fragrant.
  6. Add the carrots, celery, and onion to the pot and sauté for 5 minutes.
  7. Pour in the beef broth and scrape the bottom of the pot to release any browned bits.
  8. Return the top sirloin roast to the pot and bring the liquid to a boil.
  9. Cover the pot and transfer it to the preheated oven.
  10. Roast for 2-3 hours, or until the meat is fork-tender.
  11. Once the roast is done, remove it from the pot and let it rest for 10 minutes before slicing.
  12. Meanwhile, strain the cooking liquid and discard the vegetables.
  13. In a small bowl, whisk together the cornstarch and water to make a slurry.
  14. Transfer the strained liquid back to the pot and bring it to a simmer.
  15. Slowly pour in the cornstarch slurry while stirring constantly.
  16. Continue cooking until the gravy thickens to your desired consistency.
