Warm up on a chilly day with this comforting and creamy homemade potato soup. Made with simple ingredients and easy to prepare, this soup is perfect for a quick and satisfying meal. Serve with crusty bread or a side salad for a complete and hearty dinner.

Ingredients

  • 2 pounds potatoes, peeled and diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried parsley
  • Salt and pepper to taste
  • Optional toppings: shredded cheddar cheese, cooked bacon, chopped green onions

Directions

  1. In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until softened.
  2. Stir in the flour and cook for 1-2 minutes, until lightly browned.
  3. Gradually whisk in the chicken or vegetable broth, making sure there are no lumps. Add the diced potatoes, thyme, rosemary, parsley, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Using an immersion blender, blend the soup until smooth and creamy. If you don't have an immersion blender, you can transfer the soup to a blender or food processor in batches to puree.
  5. Return the soup to the pot and stir in the milk and heavy cream. Heat over low heat until warmed through.
  6. Taste and adjust seasonings as needed. If the soup is too thick, add more milk or broth to thin it out.
  7. Serve hot, garnished with shredded cheddar cheese, cooked bacon, and chopped green onions if desired.
  8. Enjoy this comforting and delicious potato soup!
