Ingredients

  • 8 oz rice noodles
  • 12 large shrimp, peeled and deveined
  • 8 oz firm tofu, cubed
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 1 cup bean sprouts
  • 1/4 cup roasted peanuts, chopped
  • 2 green onions, chopped
  • 2 tablespoons vegetable oil
  • 2 tablespoons tamarind paste
  • 2 tablespoons fish sauce
  • 2 tablespoons palm sugar
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Lime wedges for serving
  • Fresh cilantro for garnish

Directions

  1. Soak the rice noodles in warm water for about 20 minutes, or until they become soft. Drain and set aside.
  2. In a small bowl, mix together the tamarind paste, fish sauce, palm sugar, lime juice, and chili powder. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the shrimp and stir-fry for 2-3 minutes, until cooked through. Remove the shrimp from the wok and set aside.
  4. In the same wok, add another tablespoon of vegetable oil. Add the tofu and stir-fry for 2-3 minutes, until lightly browned. Push the tofu to one side of the wok.
  5. Add the minced garlic to the other side of the wok and stir-fry for 30 seconds, until fragrant. Push the garlic to the side with the tofu.
  6. Pour the beaten eggs into the wok and scramble them for 1-2 minutes, until cooked through. Combine the tofu, garlic, and eggs in the wok.
  7. Add the soaked rice noodles to the wok, followed by the tamarind sauce mixture. Use tongs or chopsticks to toss everything together and coat the noodles evenly with the sauce.
  8. Add the bean sprouts and chopped green onions to the wok and stir-fry for another 2-3 minutes, until the bean sprouts are slightly softened.
  9. Return the cooked shrimp to the wok and toss everything together for a final stir-fry for 1-2 minutes.
  10. Remove the wok from heat and serve the Pad Thai garnished with chopped peanuts, lime wedges, and fresh cilantro.
