  • 2 lb (900g) chicken, cut into pieces
  • 1 onion, chopped

  • 8 cups (2 liters) chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup (150g) frozen green peas
  • Fresh parsley, chopped (for garnish)

Directions

  1. In a large pot, heat some oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  2. In the same pot, add the chopped onion, carrots, celery, and garlic. Cook for about 5 minutes until the vegetables start to soften.
  3. Return the chicken to the pot and add the chicken broth, bay leaves, dried thyme, dried rosemary, salt, and black pepper. Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes, until the chicken is cooked through and tender.
  4. Remove the chicken from the pot and shred it into bite-sized pieces using two forks. Discard the bay leaves.
  5. Add the shredded chicken back to the pot along with the frozen green peas. Let the soup simmer for another 10 minutes until the peas are cooked.
