Ingredients

  • 2 ½ cups of all-purpose flour
  • 1 cup of unsalted butter, chilled and cubed

  • 6-8 tablespoons of ice water
  • 4 cups of fresh or frozen cherries, pitted
  • 1 cup of sugar
  • ¼ cup of cornstarch
  • 1 tablespoon of lemon juice
  • 1 teaspoon of vanilla extract
  • 1 egg, beaten

Directions

  1. In a large mixing bowl, combine flour and salt. Add in chilled butter and mix until crumbly.
  2. Slowly add in ice water, 1 tablespoon at a time, until dough comes together.
  3. Divide dough in half and shape into two discs. Wrap in plastic wrap and chill for at least 30 minutes.
  4. In a separate bowl, combine cherries, sugar, cornstarch, lemon juice, and vanilla extract.
  5. Roll out one disc of dough and place in a pie dish. Add cherry filling.
  6. Roll out second disc of dough and place on top of filling. Crimp edges to seal.
  7. Brush top of pie with beaten egg. Cut slits for venting.
  8. Bake at 375°F for 45-50 minutes, or until crust is golden brown.
