Ingredients

  • 2 tablespoons oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons of Thai red curry paste
  • 2 tablespoons fish sauce
  • 1 can (14 ounce) coconut milk
  • 2 cups chicken stock
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 red pepper, chopped
  • 1 cup mushrooms, sliced
  • 1/2 cup bamboo shoots, chopped
  • 2 tablespoons cilantro, chopped
  • 1/2 teaspoon chili flakes

Directions

  1. Heat oil in a large soup pot over medium heat.
  2. Add onion, garlic, ginger, and curry paste and cook until softened, about 5 minutes.
  3. Stir in fish sauce, coconut milk, chicken stock, lime juice, and brown sugar.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add red pepper, mushrooms, bamboo shoots, cilantro, and chili flakes and simmer for 5 minutes more.
  6. Serve hot.
