Ingredients
- 2 tablespoons vegetable oil

- 12 egg roll wrappers
- 1 tablespoon cornstarch mixed with 2 tablespoons water

Directions
- Heat 2 tablespoons of vegetable oil in a large skillet over medium heat.
- Add minced garlic and minced ginger to the skillet and cook for about 1 minute until fragrant.
- Add diced onion, chopped cabbage, shredded carrots, sliced mushrooms, and chopped green onions to the skillet. Cook for about 5 minutes until the vegetables are tender.
- Add bean sprouts and cooked chicken or pork to the skillet. Cook for another 2 minutes.
- In a small bowl, combine soy sauce, sesame oil, sugar, salt, and black pepper. Pour the sauce mixture over the vegetable and meat mixture in the skillet. Stir well to incorporate.
- Remove the skillet from heat and let the filling cool slightly.
- Place an egg roll wrapper on a clean surface. Spoon about 2 tablespoons of the filling onto the center of the wrapper.
- Fold the bottom corner of the wrapper over the filling, then fold the sides towards the center. Roll the wrapper tightly from the bottom to the top, sealing the edges with the cornstarch-water mixture.
- Repeat with the remaining egg roll wrappers and filling.
- In a deep fryer or large heavy pot, heat vegetable oil to 350°F (175°C).
- Carefully place the egg rolls into the hot oil and fry them in batches for about 3-4 minutes until golden brown and crispy. Make sure to turn them occasionally for even frying.
