Ingredients
2 cup all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
1 teaspoon vanilla extract
1/2 cup whole milk
1/4 cup vegetable oil
1 cup semi-sweet chocolate chips
1/2 cup vegetable oil, for frying
Directions
In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the eggs, vanilla extract, milk, and vegetable oil.
Add the wet ingredients to the dry ingredients and mix until just combined.
Add the chocolate chips and mix until just combined.
Heat the oil in a large skillet over medium-high heat.
Using a small ice cream scoop or spoon, drop the dough into the hot oil and fry for about 2 minutes, or until golden brown.
Remove the doughnuts from the oil and place on a paper towel-lined plate.
Melt the chocolate chips in the microwave in 30-second intervals, stirring in between each interval.
Dip the doughnuts in the melted chocolate and place on a parchment-lined baking sheet.
Allow the chocolate to set before serving.
