Ingredients

  • 2 pounds of boneless, skinless chicken breasts
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of paprika
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 cup of long-grain white rice
  • 2 cups of chicken broth
  • 1 cup of diced tomatoes
  • 1 cup of frozen peas

Directions

  1. Heat the olive oil in a large deep skillet over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the oregano, basil, thyme, paprika, salt and pepper and cook for 1 minute.
  4. Add the chicken and cook until lightly browned, about 5 minutes.
  5. Add the rice, chicken broth and tomatoes and stir to combine.
  6. Bring to a boil, reduce heat to low, cover and simmer for 15 minutes.
  7. Stir in the peas, cover and cook for 5 minutes more.
  8. Remove from heat and let sit for 10 minutes.
  9. Serve and enjoy!
