Ingredients
2 pounds of boneless, skinless chicken breasts
2 tablespoons of olive oil
1 onion, chopped
3 cloves of garlic, minced
1 teaspoon of dried oregano
1 teaspoon of dried basil
1 teaspoon of dried thyme
1 teaspoon of paprika
1 teaspoon of salt
1/2 teaspoon of black pepper
1 cup of long-grain white rice
2 cups of chicken broth
1 cup of diced tomatoes
1 cup of frozen peas
Directions
Heat the olive oil in a large deep skillet over medium heat.
Add the onion and garlic and cook until softened, about 5 minutes.
Add the oregano, basil, thyme, paprika, salt and pepper and cook for 1 minute.
Add the chicken and cook until lightly browned, about 5 minutes.
Add the rice, chicken broth and tomatoes and stir to combine.
Bring to a boil, reduce heat to low, cover and simmer for 15 minutes.
Stir in the peas, cover and cook for 5 minutes more.
Remove from heat and let sit for 10 minutes.
Serve and enjoy!
