Ingredients
- 2 pounds of boneless, skinless chicken breasts
- 2 tablespoons of olive oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- 1 teaspoon of dried thyme
- 1 teaspoon of paprika
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 cup of long-grain white rice
- 2 cups of chicken broth
- 1 cup of diced tomatoes
- 1 cup of frozen peas
Directions
- Heat the olive oil in a large deep skillet over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the oregano, basil, thyme, paprika, salt and pepper and cook for 1 minute.
- Add the chicken and cook until lightly browned, about 5 minutes.
- Add the rice, chicken broth and tomatoes and stir to combine.
- Bring to a boil, reduce heat to low, cover and simmer for 15 minutes.
- Stir in the peas, cover and cook for 5 minutes more.
- Remove from heat and let sit for 10 minutes.
- Serve and enjoy!
