Ingredients

  • 1 pound of ground chicken
  • 1 egg
  • 1/2 cup of Italian seasoned breadcrumbs
  • 1/4 cup of grated Parmesan cheese
  • 1/4 cup of chopped fresh parsley
  • 1/4 teaspoon of garlic powder
  • 1/4 teaspoon of onion powder
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • 1/2 cup of chopped onion
  • 1/2 teaspoon of minced garlic
  • 1 (14 ounce) can of crushed tomatoes
  • 1/2 cup of heavy cream
  • 1/4 cup of grated Parmesan cheese
  • 1/4 teaspoon of Italian seasoning
  • 1 (12 ounce) package of spaghetti

Directions

  1. In a large bowl, combine ground chicken, egg, breadcrumbs, Parmesan cheese, parsley, garlic powder, onion powder, salt, and pepper. Mix until ingredients are evenly distributed.
  2. Form the mixture into 1-inch meatballs. Heat the olive oil in a large skillet over medium heat. Add the meatballs to the skillet and cook until they are golden brown and cooked through, about 5 minutes per side.
  3. Remove the meatballs from the skillet and set aside. Add the onion and garlic to the skillet and cook until the onion is translucent, about 5 minutes. Add the crushed tomatoes, cream, Parmesan cheese, and Italian seasoning to the skillet and stir until combined.
  4. Bring the sauce to a boil and reduce the heat to low. Simmer for 10 minutes, stirring occasionally. Add the cooked meatballs to the sauce and simmer for an additional 10 minutes.
  5. Meanwhile, bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, about 8 minutes. Drain the spaghetti and return it to the pot.
  6. Add the sauce and meatballs to the pot with the spaghetti and toss to combine.
  7. Serve the Chicken Meatballs and Spaghetti with grated Parmesan cheese and fresh parsley.
