Ingredients

  • 1 cup butternut squash, peeled and cubed
  • 1 cup coconut milk
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1 tablespoon maple syrup
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped almonds

Directions

  1. Preheat oven to 375°F.
  2. Place the butternut squash cubes on a baking sheet and roast for 20 minutes.
  3. In a medium saucepan, combine the coconut milk, cinnamon, nutmeg, ginger, cardamom, and maple syrup.
  4. Bring the mixture to a simmer, then reduce heat to low.
  5. Stir in the roasted butternut squash and simmer for 10 minutes.
  6. Stir in the chopped walnuts and almonds.
  7. Serve warm.
