Ingredients

  • 1 cup of cooked sauerkraut
  • 1 cup of grated carrots
  • 1 cup of cooked ground beef
  • 1 egg
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 cup of breadcrumbs
  • 1/4 cup of olive oil

Directions

  1. In a large bowl, mix together the sauerkraut, carrots, ground beef, egg, salt, and pepper until well combined.
  2. Form the mixture into small balls, about 1-inch in diameter.
  3. Place the breadcrumbs in a shallow dish.
  4. Roll the balls in the breadcrumbs, coating evenly.
  5. Heat the oil in a large skillet over medium-high heat.
  6. Add the balls to the skillet and cook for 5-7 minutes, turning occasionally, until golden brown and cooked through.
  7. Drain the balls on a paper towel-lined plate.
  8. Serve with your favorite side dish.
