Ingredients
1 large eggplant
2 large tomatoes
2 tablespoons olive oil
Salt and pepper to taste
Fresh herbs such as parsley, basil, oregano, and thyme
Directions
Preheat the grill to medium-high heat.
Slice the eggplant and tomatoes into 1/2 inch thick slices and brush with olive oil.
Sprinkle with salt and pepper.
Place the eggplant and tomatoes on the grill and cook for 5 minutes per side, or until lightly charred and softened.
Once cooked, remove from the grill and assemble the towers on a plate.
Start by layering one slice of eggplant with one slice of tomato.
Continue layering until the tower reaches desired height.
Top with fresh herbs, salt and pepper, and a drizzle of olive oil.
Serve immediately.
