Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon saffron threads
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup long-grain white rice
  • 1/2 cup dry white wine
  • 2 cups vegetable broth
  • 1 (14-ounce) can quartered artichoke hearts, drained and rinsed
  • 1 cup cooked chicken sausage, diced
  • 1/2 head cauliflower, cut into small florets
  • 1/2 cup frozen peas
  • 2 tablespoons chopped fresh parsley

Directions

  1. Heat oil in a large skillet over medium-high heat. Add the onion and garlic and cook for 2 minutes, stirring occasionally.
  2. Add the bell pepper, paprika, cumin, saffron, salt, and pepper and cook for 1 minute, stirring occasionally.
  3. Add the rice and stir for 1 minute.
  4. Add the wine and cook until the liquid is almost completely absorbed, about 1 minute.
  5. Add the broth, artichoke hearts, chicken sausage, and cauliflower and bring to a boil.
  6. Reduce the heat to low and simmer, covered, for 15 minutes.
  7. Add the peas and simmer, covered, for an additional 5 minutes.
  8. Remove from the heat and let stand for 5 minutes.
  9. Stir in the parsley and serve.
