Ingredients
1 tablespoon olive oil
1 onion, diced
3 cloves garlic, minced
1 red bell pepper, diced
1 teaspoon smoked paprika

1 cup long-grain white rice

1 cup cooked chicken sausage, diced
1/2 head cauliflower, cut into small florets
1/2 cup frozen peas
2 tablespoons chopped fresh parsley
Directions
Heat oil in a large skillet over medium-high heat. Add the onion and garlic and cook for 2 minutes, stirring occasionally.
Add the bell pepper, paprika, cumin, saffron, salt, and pepper and cook for 1 minute, stirring occasionally.
Add the rice and stir for 1 minute.
Add the wine and cook until the liquid is almost completely absorbed, about 1 minute.
Add the broth, artichoke hearts, chicken sausage, and cauliflower and bring to a boil.
Reduce the heat to low and simmer, covered, for 15 minutes.
Add the peas and simmer, covered, for an additional 5 minutes.
Remove from the heat and let stand for 5 minutes.
Stir in the parsley and serve.
