Preheat oven to 375°. On a lightly floured surface, unroll pie crusts. Using a 3-1/2-in. biscuit cutter, cut out 12 circles; place in greased muffin cups.
In a skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; set aside. In the same skillet, saute onion and green pepper until tender. Drain.
In a small bowl, whisk eggs, cream, salt and pepper. Stir in the bacon, onion, green pepper and cheese. Spoon about 2 tablespoons into each muffin cup.
Bake 18-20 minutes or until a knife inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire racks.
