Ingredients

Directions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the vegetable oil over medium heat.
  3. Add the diced onion, bell pepper, and minced garlic. Cook until the vegetables are softened and the onion is translucent.
  4. Add the shredded chicken to the skillet and mix well.
  5. In a separate bowl, combine the red enchilada sauce, sour cream, chicken broth, ground cumin, chili powder, salt, and black pepper. Stir until well combined.
  6. Pour half of the enchilada sauce mixture into the skillet with the chicken and vegetables. Mix well to coat the chicken.
