Ingredients

  • 2 tablespoons olive oil
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 pound boneless, skinless chicken breast, cut into cubes
  • 1 cup frozen corn kernels
  • 1 (15 ounce) can black beans, drained and rinsed
  • 4 cups chicken broth
  • 1/2 cup chopped fresh cilantro

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onion, bell pepper, garlic, cumin, chili powder, oregano, salt, and pepper; cook and stir until the vegetables are softened, about 5 minutes.
