Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium zucchini, diced
  • 2 cups vegetable broth
  • 1 cup orzo pasta
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Directions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic and cook until softened, about 5 minutes.
  3. Add zucchini and cook until lightly browned, about 5 minutes.
  4. Add vegetable broth, orzo, Parmesan cheese, and oregano. Stir to combine.
  5. Cover and simmer until the orzo is tender and the liquid is absorbed, about 15 minutes.
  6. Season with salt and pepper to taste.
  7. Serve warm.
