Ingredients
1 package lemon gelatin
1 cup boiling water
1/2 cup cold water
1 can (14.5 ounces) diced tomatoes, drained
1/4 cup chopped green onion
1/4 cup chopped celery
1/4 cup lemon juice
1/2 teaspoon minced garlic
Directions
In a medium bowl, dissolve gelatin in boiling water. Add cold water and stir until gelatin is completely dissolved.
Pour half of the gelatin mixture into a 9-inch round dish. Refrigerate for 15 minutes or until set.
In a medium bowl, combine tomatoes, green onion, celery, lemon juice and garlic. Mix well and spoon over set gelatin.
Gently pour remaining gelatin mixture over tomato mixture. Refrigerate for 15 minutes or until completely set.
Cut into wedges and serve.
