Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-size pieces
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups diced mixed vegetables (such as carrots, bell peppers, and mushrooms)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups low-sodium chicken broth
  • 1 (16-ounce) package bow tie pasta
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the chicken and cook until lightly browned, about 5 minutes.
  2. Add the onion, garlic, vegetables, Italian seasoning, salt and pepper. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  3. Add the chicken broth and bow tie pasta. Bring the mixture to a boil, then reduce the heat to low and simmer, stirring occasionally, until the pasta is cooked through and the liquid has been absorbed, about 12 minutes.
  4. Remove from the heat and stir in the Parmesan cheese and parsley. Serve hot.
