Ingredients
1 tablespoon sesame oil
3 cloves garlic, minced
1/2 teaspoon freshly grated ginger
3 cups chicken broth
1 cup sliced mushrooms
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1/4 teaspoon freshly ground black pepper
2 tablespoons soy sauce

Directions
Heat the sesame oil in a large pot over medium heat.
Add the garlic and ginger and sauté for 1 minute.
Add the chicken broth and mushrooms and bring to a boil.
Add the chicken, salt, and pepper and simmer for 10 minutes.
In a small bowl, whisk together the soy sauce and cornstarch.
Add the soy sauce mixture to the pot and simmer for 5 minutes.
Add the bok choy and simmer for 5 minutes.
Garnish with cilantro and serve hot.

It is high in vitamins A and C, as well as calcium and iron.
