Ingredients
- 1 tablespoon sesame oil
- 3 cloves garlic, minced
- 1/2 teaspoon freshly grated ginger
- 3 cups chicken broth
- 1 cup sliced mushrooms
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons soy sauce
- 2 tablespoons cornstarch
- 4 cups chopped bok choy
- 2 tablespoons chopped fresh cilantro
Directions
- Heat the sesame oil in a large pot over medium heat.
- Add the garlic and ginger and sauté for 1 minute.
- Add the chicken broth and mushrooms and bring to a boil.
- Add the chicken, salt, and pepper and simmer for 10 minutes.
- In a small bowl, whisk together the soy sauce and cornstarch.
- Add the soy sauce mixture to the pot and simmer for 5 minutes.
- Add the bok choy and simmer for 5 minutes.
- Garnish with cilantro and serve hot.
