Ingredients

  • 1/2 cup chia seeds
  • 2 cups almond milk
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • Optional: fresh fruit, nuts, and/or granola for topping

Directions

  1. In a medium bowl, combine the chia seeds, almond milk, honey, and vanilla extract.
  2. Stir until everything is well combined.
  3. Cover the bowl and let the mixture sit in the refrigerator overnight.
  4. In the morning, give the pudding a stir and top with fresh fruit, nuts, and/or granola if desired.
