Ingredients
- 2 cups peeled and cubed butternut squash
- 3 large carrots, peeled and sliced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
- 1/4 cup grated Parmesan cheese
Directions
- Preheat the oven to 375 degrees F (190 degrees C). Grease a medium baking dish.
- In a large bowl, combine the squash, carrots, olive oil, garlic powder, thyme, salt, and pepper. Toss to coat.
- Transfer the mixture to the prepared baking dish and spread it out evenly. Sprinkle the Parmesan cheese over the top.
- Bake in the preheated oven for 25 to 30 minutes, or until the squash and carrots are tender.
- Serve hot or cold.
