Ingredients

  • 2 cups peeled and cubed butternut squash
  • 3 large carrots, peeled and sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease a medium baking dish.
  2. In a large bowl, combine the squash, carrots, olive oil, garlic powder, thyme, salt, and pepper. Toss to coat.
  3. Transfer the mixture to the prepared baking dish and spread it out evenly. Sprinkle the Parmesan cheese over the top.
  4. Bake in the preheated oven for 25 to 30 minutes, or until the squash and carrots are tender.
  5. Serve hot or cold.
