Ingredients
2 cups peeled and cubed butternut squash
3 large carrots, peeled and sliced
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon dried thyme
Salt and pepper, to taste
1/4 cup grated Parmesan cheese
Directions
Preheat the oven to 375 degrees F (190 degrees C). Grease a medium baking dish.

Transfer the mixture to the prepared baking dish and spread it out evenly. Sprinkle the Parmesan cheese over the top.

Serve hot or cold.
