Ingredients
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1 cup chopped pecans
- 4 eggs, lightly beaten
- 1/2 cup evaporated milk
- 1 cup white sugar
- 2 tablespoons butter, melted
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
- In a medium bowl, cream together the 1/2 cup butter, 1/2 cup sugar and salt until light and fluffy. Stir in the vanilla. Gradually beat in the flour until a soft dough forms. Press the dough into the prepared pan.
- Bake for 15 minutes in the preheated oven, or until the dough is lightly browned. Sprinkle the top of the crust with the chopped pecans.
- In a large bowl, beat together the eggs, evaporated milk, white sugar, and 2 tablespoons melted butter. Pour the mixture over the crust and pecans.
- Bake for an additional 30 minutes in the preheated oven, or until set. Let cool before serving.
