Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted
  • 1 egg
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 cups sweet cherries, pitted and halved
  • 1 cup sweetened flaked coconut
  • 1/4 cup granulated sugar

Directions

  1. Preheat oven to 350°F. Grease an 8-inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Add melted butter, egg, milk, and vanilla extract and stir until combined.
  3. Spread batter into prepared pan. Sprinkle cherries and coconut over the top. Sprinkle with remaining sugar.
