Ingredients
1 (4-5 lb) boneless leg of lamb
4 cloves garlic, minced
2 tablespoons rosemary, chopped
1 tablespoon thyme, chopped

Salt and pepper to taste
Directions
Preheat oven to 350 degrees F (175 degrees C).
Place lamb in a roasting pan.
In a small bowl, mix together garlic, rosemary, thyme, olive oil, salt, and pepper. Rub mixture over entire surface of the lamb.
Roast in preheated oven for 2 to 2 1/2 hours, or until the internal temperature of the roast reaches 140 degrees F (60 degrees C).
Allow to rest for 10 to 15 minutes before slicing.
