Ingredients
1 large butternut squash, peeled and spiralized
2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon cumin
1 can black beans, drained and rinsed

Directions
Preheat oven to 400°F.
Place spiralized butternut squash on a baking sheet. Drizzle with olive oil, chili powder, cumin, salt, and pepper.
Roast for 15 minutes, stirring halfway through.
Meanwhile, heat black beans in a saucepan over medium heat. Add garlic, cilantro, salt, and pepper and cook for 5 minutes.
Heat tortillas in the microwave for 30 seconds.
To assemble tacos, fill each tortilla with roasted butternut squash and black beans. Top with sour cream and shredded cheese.
