Butternut Squash Spirals and Black Bean Tacos

Ingredients

  • 1 large butternut squash, peeled and spiralized
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 can black beans, drained and rinsed
  • 1 tablespoon garlic, minced
  • 1/4 cup cilantro, chopped
  • salt and pepper, to taste
  • 8 small tortillas
  • sour cream, for topping
  • shredded cheese, for topping

Directions

  1. Preheat oven to 400°F.
  2. Place spiralized butternut squash on a baking sheet. Drizzle with olive oil, chili powder, cumin, salt, and pepper.
  3. Roast for 15 minutes, stirring halfway through.
  4. Meanwhile, heat black beans in a saucepan over medium heat. Add garlic, cilantro, salt, and pepper and cook for 5 minutes.
  5. Heat tortillas in the microwave for 30 seconds.
  6. To assemble tacos, fill each tortilla with roasted butternut squash and black beans. Top with sour cream and shredded cheese.
  7. Enjoy!
