Ingredients
- 1 large butternut squash, peeled and spiralized
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 can black beans, drained and rinsed
- 1 tablespoon garlic, minced
- 1/4 cup cilantro, chopped
- salt and pepper, to taste
- 8 small tortillas
- sour cream, for topping
- shredded cheese, for topping
Directions
- Preheat oven to 400°F.
- Place spiralized butternut squash on a baking sheet. Drizzle with olive oil, chili powder, cumin, salt, and pepper.
- Roast for 15 minutes, stirring halfway through.
- Meanwhile, heat black beans in a saucepan over medium heat. Add garlic, cilantro, salt, and pepper and cook for 5 minutes.
- Heat tortillas in the microwave for 30 seconds.
- To assemble tacos, fill each tortilla with roasted butternut squash and black beans. Top with sour cream and shredded cheese.
