Ingredients

  • 1 pound fresh salmon fillet
  • 1/2 cup bread crumbs

Directions

  2. Place the salmon fillet on a baking sheet and bake for 15-20 minutes until cooked through. Let it cool.
  3. In a large mixing bowl, combine the bread crumbs, mayonnaise, Dijon mustard, fresh dill, fresh parsley, onion, minced garlic, lemon zest and juice, salt, and black pepper. Mix well.
  4. Flake the cooked salmon into the bowl with the mixture. Add the beaten eggs and mix until well combined.
  5. Transfer the mixture to a greased loaf pan and smooth the top with a spatula.
  6. Bake in the preheated oven for 35-40 minutes until the top is golden brown and the loaf is cooked through.
