Ingredients
- 1 pound fresh salmon fillet
- 1/2 cup bread crumbs
- 1/4 cup mayonnaise

- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 lemon, zest and juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs, beaten
Directions
- Preheat the oven to 375 degrees F (190 degrees C).
- Place the salmon fillet on a baking sheet and bake for 15-20 minutes until cooked through. Let it cool.
- In a large mixing bowl, combine the bread crumbs, mayonnaise, Dijon mustard, fresh dill, fresh parsley, onion, minced garlic, lemon zest and juice, salt, and black pepper. Mix well.
- Flake the cooked salmon into the bowl with the mixture. Add the beaten eggs and mix until well combined.
- Transfer the mixture to a greased loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 35-40 minutes until the top is golden brown and the loaf is cooked through.
- Remove from the oven and let it cool for a few minutes before slicing.
