Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • Vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon honey
  • 1 tablespoon Sriracha sauce
  • 2 teaspoons lime juice
  • 2 green onions, thinly sliced

Directions

  1. In a large bowl, combine the buttermilk, paprika, salt, black pepper, garlic powder, and cayenne pepper. Add the shrimp to the bowl and toss gently to coat. Let the shrimp marinate in the refrigerator for 15 minutes.
  2. In a separate shallow bowl, mix the flour with a pinch of salt and pepper. Remove each shrimp from the buttermilk marinade, allowing any excess to drip off, then dredge in the flour mixture, pressing lightly to adhere. Shake off any excess flour.
  3. In a deep pot or skillet, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C). Working in batches, carefully lower the coated shrimp into the hot oil and fry until golden brown and crispy, about 2-3 minutes per batch. Use a slotted spoon or spider strainer to transfer the fried shrimp to a paper towel-lined plate to drain.
  4. In a small bowl, whisk together the mayonnaise, sweet chili sauce, honey, Sriracha sauce, and lime juice until smooth and well combined.
  5. Once all the shrimp are fried, transfer them to a large bowl and pour the sauce over them. Toss gently to coat each shrimp with the sauce.
  6. Garnish with sliced green onions and serve immediately. Enjoy!
