Ingredients
- 6 small potatoes
- 1/2 cup sour cream
- 1/4 cup milk
- 4 tablespoons butter, softened
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Chopped green onions and sour cream for garnish
Directions
- Preheat the oven to 400°F (200°C).
- Wash the potatoes and pierce them with a fork. Bake the potatoes for 40 minutes or until tender.
- Cut off the top third of each potato and scoop out the flesh, leaving a thin layer of potato on the skin. Place the scooped out flesh in a bowl.
- Add sour cream, milk, butter, shredded cheddar cheese, crumbled bacon, garlic powder, onion powder, paprika, salt, and pepper to the scooped out potato flesh. Mash until well combined.
- Fill each potato skin with the mashed potato mixture, heaping it up.
- Place the filled potatoes on a baking sheet and bake for another 15 minutes or until the tops are golden and crispy.
- Garnish with chopped green onions and a dollop of sour cream.
