These Twice Baked Potato Poppers are the perfect appetizer or side dish. Ingredients

  • 6 small potatoes
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 4 tablespoons butter, softened
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Chopped green onions and sour cream for garnish

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and pierce them with a fork. Bake the potatoes for 40 minutes or until tender.
  3. Cut off the top third of each potato and scoop out the flesh, leaving a thin layer of potato on the skin. Place the scooped out flesh in a bowl.
  4. Add sour cream, milk, butter, shredded cheddar cheese, crumbled bacon, garlic powder, onion powder, paprika, salt, and pepper to the scooped out potato flesh. Mash until well combined.
  5. Fill each potato skin with the mashed potato mixture, heaping it up.
  6. Place the filled potatoes on a baking sheet and bake for another 15 minutes or until the tops are golden and crispy.
  7. Garnish with chopped green onions and a dollop of sour cream.
  8. Serve hot and enjoy!
