Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup

  • 1 cup chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 12 corn tortillas
  • 2 cups shredded cheddar cheese
  • Sour cream, for serving

Directions

  1. Preheat oven to 350°F and grease a 9x13-inch baking dish.
  2. In a large bowl, mix together shredded chicken, cream of chicken soup, cream of mushroom soup, diced tomatoes with green chilies, onion, bell pepper, chicken broth, chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper.
  3. Place 6 tortillas in the bottom of the prepared baking dish, tearing them as needed to cover the bottom.
  4. Spread half of the chicken mixture over the tortillas, then sprinkle with 1 cup of shredded cheese.
  5. Repeat layers with remaining tortillas, chicken mixture, and shredded cheese.
  6. Cover the dish with foil and bake for 30 minutes.
  7. Remove foil and bake for an additional 10 minutes, until cheese is bubbly and golden brown.
  8. Let the casserole cool for a few minutes before serving.
  9. Serve with a dollop of sour cream and a sprinkle of chopped cilantro.
