Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 2 bunches Swiss chard, stems removed and leaves chopped into ribbons

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for 5-7 minutes, until softened.
  2. Add the cumin, smoked paprika, curry powder, salt, and pepper and cook for 2 minutes.
  3. Add the vegetable broth and coconut milk and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
  4. Add the chard and simmer for 5 minutes, or until the chard is wilted.
  5. Serve hot.
