Ingredients

  • 1 pound of shrimp, peeled and deveined
  • 2 tablespoons of soy sauce
  • 1 teaspoon of sesame oil
  • 2 cloves of garlic, minced
  • 1 tablespoon of freshly grated ginger
  • 2 tablespoons of vegetable oil
  • 1 cup of diced carrots
  • 1 cup of diced bell peppers
  • 2 cups of cooked white rice
  • 3 cloves of garlic, minced
  • 2 scallions, chopped
  • Salt and pepper to taste

Directions

  1. In a medium bowl, combine the shrimp, soy sauce, sesame oil, 1 minced garlic clove, and grated ginger. Let the marinate for 10 minutes.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated shrimp and cook for 3-4 minutes, stirring occasionally.
  3. Add the carrots and bell peppers and cook for an additional 3-4 minutes. Remove the shrimp and vegetables from the skillet and set aside.
  4. Add the cooked rice, garlic, scallions, salt, and pepper to the skillet and cook for 2-3 minutes, stirring occasionally.
  5. Add the shrimp and vegetables back to the skillet and stir to combine. Cook for an additional 2-3 minutes, stirring occasionally.
  6. Serve the ginger shrimp with fried rice warm.
