Ingredients
1 pound of shrimp, peeled and deveined
2 tablespoons of soy sauce
1 teaspoon of sesame oil
2 cloves of garlic, minced
1 tablespoon of freshly grated ginger

Directions

Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated shrimp and cook for 3-4 minutes, stirring occasionally.
Add the carrots and bell peppers and cook for an additional 3-4 minutes. Remove the shrimp and vegetables from the skillet and set aside.
Add the cooked rice, garlic, scallions, salt, and pepper to the skillet and cook for 2-3 minutes, stirring occasionally.
Add the shrimp and vegetables back to the skillet and stir to combine. Cook for an additional 2-3 minutes, stirring occasionally.
Serve the ginger shrimp with fried rice warm.
