Ingredients

  • 2 dozen fresh oysters
  • 2 tablespoons melted butter
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • Salt and freshly ground black pepper to taste

Directions

  1. Preheat the grill to high heat.
  2. Scrub the oysters with a stiff brush under cold running water.
  3. Open the oysters using an oyster knife, being careful to keep the oyster and the juices intact.
  4. Arrange the oysters in a single layer on a baking sheet.
  5. Combine the butter, olive oil, and lemon juice in a small bowl and mix well.
  6. Brush the oysters with the butter mixture and sprinkle with the parsley, salt, and pepper.
  7. Place the oysters on the grill and cook for 4 minutes, or until the edges are just beginning to curl.
  8. Serve immediately.
