Ingredients
- 4 medium zucchinis
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 pound ground beef
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup tomato sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Directions
- Preheat the oven to 350°F.
- Cut the zucchini in half lengthwise and scoop out the seeds. Place the zucchini halves in a baking dish.
- Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the ground beef and cook until no longer pink, about 10 minutes. Stir in the cumin, oregano, garlic powder, salt, and pepper.
- Stir in the tomato sauce and cook for 2 minutes. Spoon the mixture into the zucchini boats. Top with the mozzarella and Parmesan cheese.
- Bake for 30 minutes, or until zucchini is tender.
- Serve warm.
