Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced bell pepper
  • 1 cup diced mushrooms
  • 1 cup chopped peanuts
  • 1/2 cup water
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 3 cups cooked brown rice

Directions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Add the carrots, celery, bell pepper, mushrooms, and peanuts and cook until vegetables are tender, about 10 minutes.
  4. In a small bowl, whisk together the water, soy sauce, honey, sesame oil, garlic, and ginger.
