Ingredients

  • 4 salmon fillets (4-6 ounces each)
  • 1/2 cup panko bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter

Directions

  1. Preheat oven to 400°F.
  2. In a shallow dish, combine the panko, Parmesan, parsley, garlic powder, salt, and pepper. Mix until fully combined.
  3. Brush each salmon fillet with olive oil and season with salt and pepper.
  4. Dip each fillet into the panko mixture, pressing down lightly to make sure the panko sticks to the fish.
  5. Heat a large skillet over medium-high heat. Add the butter and olive oil.
  6. Add the salmon fillets to the skillet and cook for 3-4 minutes, or until the panko is golden brown and the salmon is cooked through.

  8. Serve with your favorite side dishes.
