Ingredients
- 1 lb white fish fillets, such as cod or haddock, cut into chunks
- 4 cups fish or vegetable broth
- 1 cup heavy cream
- 2 large potatoes, peeled and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp butter
- 2 tbsp all-purpose flour
- Fresh parsley for garnish
Directions
- In a large pot, melt the butter over medium heat.
- Add the onion and garlic, and cook until softened, about 5 minutes.
- Stir in the flour and cook for another minute.
- Gradually pour in the broth while stirring constantly to prevent lumps.
- Add the potatoes, thyme, paprika, salt, and pepper.
- Simmer for 15-20 minutes until the potatoes are tender.
- Add the fish and cream, and cook for another 10 minutes until the fish is cooked through.
- Taste and adjust seasonings as needed.
- Serve hot garnished with fresh parsley.
